Tomato Recipe - Triple Tomato Bruschetta
May 8th, 2008Cooked tomatoes are rich in lycopene, which has been shown to lower the risk of prostate, breast, and digestive-tract cancers. The spinach in the salad has folate, which promotes a healthy heart. Finishing the meal with grapes provides antioxidants that increase HDL (good cholesterol) and flavonoids that lower the risk of heart attack or stroke.
You Will Need
3-4 thin slices whole wheat Italian bread (total 1 1/2 oz)
2 pieces sun-dried tomatoes in oil, well-drained
1/4 cup diced tomato
2 tablespoons thick tomato-based pasta sauce
What to Do
1. Toast Italian bread until crisp.
2. Slice drained, sun-dried tomatoes into thin slivers. Combine with diced tomato and tomato sauce. Spoon onto bread slices.
Serves: 1
Per serving: 140 calories, 2 g fat, 0 g sat fat, 0 mg cholesterol, 410 mg sodium, 27 g carbohydrate, 5 g fiber, 6 g protein

Makes 4 servings
375ml tomato juice
225ml orange juice (best freshly squeezed)
1 teaspoon sugar
Juice of half a lime
Plenty of crushed ice
Mix all the ingredients together in a jug and pour into tall glasses over crushed ice.

Tomato Recipe - Tomato Breakfast Toasts

Ingredients
2 large ripe tomatoes
4 eggs
1/2 cup low-fat milk
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon minced thyme leaves
1/4 teaspoon black pepper
1/4 teaspoon dry mustard
8 slices sourdough bread (about 1/2 in. thick)
2 teaspoons olive oil
8 slices gruyère or white cheddar cheese
Preparation
1. Cut tomatoes into 1/8- to 1/4-in.-thick slices and lay on paper towels (to soak up some of their juices). Set aside.
2. In a medium bowl, whisk together eggs, milk, Dijon mustard, salt, thyme, pepper, and dry mustard. Soak each bread slice in egg mixture for about 30 seconds.
3. Heat oil in a large pan over medium-high heat. Working in batches of 4 slices, cook bread until browned on one side, 1 minute. Turn bread over and top with 1 slice tomato and 1 slice cheese. Reduce heat to low, cover pan, and cook until cheese melts, about 2 minutes. Serve hot.
Note: Nutritional analysis is per slice.

Tomato Recipe - Tomato Soup
April 25th, 20081 (14-ounce) can chopped tomatoes
3/4 cup extra virgin olive oil
Salt and freshly ground black pepper
1 stalk celery, diced
1 small carrot, diced
1 yellow onion, diced
2 cloves garlic, minced
1 cup chicken broth
1 bay leaf
2 tablespoons butter
1/4 cup chopped fresh basil leaves
1/2 cup heavy cream, optional
Preheat oven to 450 degrees F.
Strain the chopped canned tomatoes, reserving the juices, and spread onto a baking sheet, season with salt and pepper, to taste, drizzle with 1/4 cup of the olive oil and roast until caramelized, about 15 minutes.
Meanwhile, in a saucepan, heat remaining olive oil over medium-low heat. Add the celery, carrot, onion and garlic, cook until softened, about 10 minutes. Add the roasted chopped canned tomatoes, reserved tomato juices, chicken broth, bay leaf and butter. Simmer until vegetables are very tender, about 15 to 20 minutes. Add basil and cream, if using. Puree with a hand held immersion blender until smooth.

Tomato Recipe - Tomato Breakfast Pudding

Non-stick spray
4 cups bread cubes
1/2 cup butter (melted)
1/4 cup balsamic vinegar
3 Tablespoon brown sugar
1/4 cup red wine
1/3 cup grated cheese
1 can stewed tomatoes (plain or seasoned)
Spray large baking dish with non-stick spray. Place bread cubes in baking dish. Mix together butter, balsamic vinegar, brown sugar, and red wine. Pour mixture over bread cubes to soak. Sprinkle with grated cheese. Add stewed tomatoes. Lift gently to allow tomatoes to sink in a bit. Cover and bake at 375 degrees for 45 minutes.
